Instructions

Prepare the Vegetables

  • Wash and grate the carrot. Thinly slice the capsicum. Finely chop the green chili and coriander.

Combine Ingredients

  • In a bowl, combine the grated carrot, sliced capsicum, chopped green chili, coriander, salt, chaat masala, and black pepper.

Prepare the Oat Mixture

  • In a separate bowl, gently mix the rolled oats and plain yogurt (curd). Let it sit for about 15-20 minutes to allow the oats to soften.

Assemble the Sandwich

  • Gently stir the vegetable mixture into the oat and yogurt mixture.
  • Spread the mixture evenly onto two slices of brown bread. Top with the remaining bread slices.

Toast or Grill

  • Lightly butter or oil the outside of the sandwich. Grill or toast in a sandwich maker or pan until golden brown and the filling is heated through.

Serve

  • Serve your Capsicum & Carrot Oats Sandwich warm. Enjoy it as is, or with your favorite chutney or sauce.
