Ingredients
Vegetables
- 1 Bell Peppers medium sized, thinly sliced
- 1 Carrot grated, large
- 1 tbsp Chili finely chopped, green
- 1 tbsp Coriander chopped (cilantro), fresh
Oat & Curd Mixture
- 1/2 cup Rolled Oats
- 1/2 cup Yogurt curd
Seasoning
- 1/2 tsp Salt or to taste
- 1/2 tsp Chaat Masala
- 1/4 tsp Pepper black, ground
Instructions
Prepare the Vegetables
- Wash and grate the carrot. Thinly slice the capsicum. Finely chop the green chili and coriander.
Combine Oat and Curd Mixture
- In a bowl, combine the rolled oats and plain yogurt (curd). Let it soak for about 30 minutes to soften the oats.
Mix all Ingredients
- Add the grated carrot, sliced capsicum, chopped green chili, coriander, salt, chaat masala, and black pepper to the oat and curd mixture. Mix well to combine.
Assemble and Toast the Sandwich
- Spread a thin layer of butter on one slice of brown bread. Spread half of the vegetable and oat mixture evenly over the buttered bread. Top with another slice of bread. Repeat for the second sandwich.
Grill or Toast
- Lightly butter the outside of both sandwiches. Grill or toast in a sandwich maker or pan until golden brown and the filling is heated through.
