Soaking and Grinding
- Wash the brown rice, idli rice, and urad dal separately. Soak the brown rice and idli rice together in one bowl, and the urad dal separately, for at least 5 hours, or preferably overnight.
Grinding the Rice Mixture
- Grind the soaked brown rice and idli rice together in a wet grinder, using as little water as possible. The batter should be slightly coarse. Add the instant oats and grind again until well combined. Transfer the batter to a large bowl and set aside.
Grinding the Dal and Batter Preparation
- Grind the soaked urad dal to a fine, smooth consistency, again using minimal water. Add this dal batter to the rice and oat batter. Add water to achieve a smooth, pouring consistency, similar to pancake batter. Cover the batter and let it ferment in a warm place overnight (or for at least 8-10 hours).
Steaming and Serving
- In the morning, gently whisk the batter to combine. Lightly grease your idli molds with oil. Fill each mold about ¾ full with the batter. Steam the idlis for 12-15 minutes, or until they are cooked through and firm to the touch. Let them rest for 5 minutes before removing them from the molds. Serve hot with your favorite sambar and chutney.
