  • Prepare the salted caramel. In a heavy-bottomed saucepan over medium heat, cook the sugar, stirring constantly, until it melts and turns a rich amber color. This creates the caramel base.
  • Immediately add the butter to the melted sugar and whisk vigorously. The mixture will bubble. Whisking ensures even incorporation and prevents burning.
  • Carefully pour in the heavy cream while whisking constantly. The mixture will bubble vigorously. Continue whisking until smooth. Bring to a boil for 1 minute to thicken the caramel. Remove from heat and stir in the salt. Set aside to cool.
  • Prepare the brownies. Melt the butter and milk chocolate together in a double boiler or microwave in 30-second intervals, stirring until smooth. This creates a rich chocolate base for the brownies.
  • In a separate bowl, whisk together the oat flour, whole wheat flour, and cocoa powder.
  • In a large bowl, beat the eggs until light and fluffy, about 5 minutes. Gradually add the sugar and beat until the mixture is pale and creamy. This creates air for a lighter brownie texture.
  • Gently fold the melted chocolate mixture into the egg mixture until just combined. Add the dry ingredients and fold until no streaks of flour remain. Do not overmix, as this can make the brownies tough.
  • Pour half of the brownie batter into a parchment-lined baking pan. Drizzle with half of the cooled salted caramel and sprinkle with half of the roasted peanuts.
  • Pour the remaining brownie batter over the caramel and peanut layer. Top with the remaining peanuts and swirl the remaining caramel throughout the batter.
  • Bake in a preheated oven at 325-340°F (160-170°C) for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached. Let the brownies cool completely before cutting and serving.
