- 1/2 cup Semolina also known as suji
- 1/2 cup Coconut Sugar
- 1 tsp Baking Powder
Wet Ingredients
- 1 cup Butter melted, unsalted
- 1/2 cup Heavy Cream
- 1 tsp Vanilla Extract
- 1/2 cup Cashews crushed; or substitute with 1/2 cup crushed almonds
Optional Topping
- 1/4 cup Heavy Cream for topping
- 1/4 cup Blueberries fresh or frozen, for topping
- 2 Eggs large
Instructions
Prepare the Batter
- Combine all dry ingredients: flour, semolina, coconut sugar, and baking powder in a large bowl. In a separate bowl, whisk together the melted butter, heavy cream, vanilla extract, and eggs.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
- Stir in the crushed cashews.
Bake the Brownies
- Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
- Pour the brownie batter into the prepared pan and spread evenly.
