Prepare the Ingredients

  • Wash and rinse the alfalfa sprouts. Thinly slice the red onion, mushrooms, and tomato. Chop the black olives and jalapenos.

Make the Guacamole

  • Mash the avocado with a fork. Stir in salt, pepper, and lime juice to taste.

Assemble the Sandwich

  • Spread red wine vinaigrette on two slices of bread. Top one slice with the red onion, mushrooms, and shredded cheddar cheese.
  • On the other slice, layer the tomato, black olives, jalapenos, and Italian seasoning. Season with salt and pepper to taste.
  • Broil the bread slices for 5 minutes, or until the cheese is melted and bubbly. Remove from oven, and top one bread slice with guacamole and alfalfa sprouts.
  • Top with the other bread slice. Cut diagonally or vertically into finger sandwiches.
