Ingredients
- 14 oz Cottage Cheese paneer
- 1 Marinade
- 1/2 bunch Mint Leaves
- 2 Spinach handfuls
- 2 Chilli green
- 1 tsp Garlic Paste or garlic minced garlic
- 1/2 bunch Coriander dhania, fresh
- 1 tbsp Greek Yogurt or curd or thick curd
- 2 Marinade
- 2 tbsp Greek Yogurt
- 1 tsp Turmeric Powder haldi
- 1 tbsp Chili Powder red
- 1 tbsp Ginger Garlic Paste heaped
- 1/2 tbsp Garam Masala
- 1 tbsp Sesame Seeds black
- 1/2 tsp Carom Seeds ajwain, carom seeds
- 1.5 tsp Salt or as per taste
- Pita Bread
- Onion cucumber, lettuce as garnish/accompaniment sliced, tomato
- Lemon Juice as per taste
- dash Chaat Masala
Instructions
Prepare the Mint Chutney
- Wash and finely chop the mint leaves, spinach, green chilies, and coriander. Combine these with the garlic paste, yogurt, and salt in a food processor or blender. Blend until you achieve a smooth paste.
Prepare the Paneer
- Cut the paneer into 2x2-inch squares, about 1/2 inch thick. Slit each square horizontally about 3/4 of the way through, creating a pocket.
Fill and Marinate the Paneer
- Spoon a teaspoon of the mint chutney into the slit of each paneer square, spreading it evenly. In a separate bowl, combine all the marinade ingredients. Coat each paneer square thoroughly with the marinade.
Grill the Paneer
- Thread the marinated paneer onto skewers. Grill in a tandoor or under a broiler until lightly browned and heated through. Alternatively, you can pan-fry them in a lightly oiled pan over medium heat.
Prepare the Pita Bread (Optional)
- Warm the pita bread. Fill it with the onion, tomato, cucumber, and lettuce.
Serve
- Serve the grilled paneer immediately. Garnish with a squeeze of lemon juice and a sprinkle of chaat masala. Serve alongside the filled pita bread for a complete meal.
