Ingredients

- 1 Chicken Breast about 6 oz, grilled and sliced
For the Salad:
- 4 cup Romaine Lettuce chopped
- 1 cup Strawberries sliced
- 1 bunch Baby Spinach about 5 oz, washed and trimmed
- 1 cup Blueberries fresh
- 1 cup Mandarin Oranges canned or fresh, segments
- 2 slices Pineapple fresh, grilled or stewed in sugar
- 1/2 cup Pecans toasted and roughly chopped
For the Roasted Poppy Seed Dressing:
- 1/2 cup Mayonnaise light
- 1/4 cup Skimmed Milk
- 1 tsp Dijon Mustard
- 1/4 cup Orange Juice freshly squeezed
- 2 tbsp Grape Juice red grape juice
- 1 tbsp Apple Cider Vinegar
- 1/2 tbsp Poppy Seeds lightly toasted
- 1 tbsp Sugar granulated sugar
- 1/2 tsp Salt
- 1/4 tsp Pepper black, freshly ground
Instructions
Prepare the Chicken
- Grill or pan-fry the chicken breast until cooked through and slightly charred. Let it cool, then slice.
Make the Dressing
- In a small bowl, whisk together the mayonnaise, skim milk, Dijon mustard, orange juice, grape juice, apple cider vinegar, poppy seeds, sugar, salt, and pepper until smooth and creamy.
Assemble the Salad
