Ingredients
For the Coleslaw Filling:
- 1 cup Carrot grated
- 1/2 cup Tomato finely chopped, seeds removed
- 1/2 cup Cucumber finely chopped
- 1 cup Cabbage shredded (green or napa)
- 3.5 leaves Lettuce romaine or butter lettuce, roughly torn
- 4 tbsp Mayonnaise
- 2 tbsp Cheese cheddar, or your preferred type; alternatively, use 2 tbsp of a spicy sandwich spread
- 1/2 tsp Pepper freshly ground, black, is best
- 1.5 tsp Salt or to taste
For the Sandwich:
- 8 slices Sandwich Bread your favorite type
- 1 tbsp Butter softened, for spreading
Instructions
Prepare the Coleslaw Filling
- Combine grated carrot, finely chopped cucumber and tomato, shredded cabbage, and torn lettuce in a bowl.
- Add mayonnaise, cheese (or spicy spread), salt, and pepper. Mix thoroughly.
Assemble the Sandwiches
- Trim the crusts off the bread slices.
- Spread softened butter on one side of each bread slice.
- Spoon 2-3 tablespoons of coleslaw filling onto one buttered slice.
- Top with another buttered slice, butter-side down.
- Repeat with remaining ingredients to make all sandwiches.
