For the Coleslaw Filling:

  • 1 cup Carrot grated
  • 1/2 cup Tomato finely chopped, seeds removed
  • 1/2 cup Cucumber finely chopped
  • 1 cup Cabbage shredded (green or napa)
  • 3.5 leaves Lettuce romaine or butter lettuce, roughly torn
  • 4 tbsp Mayonnaise
  • 2 tbsp Cheese cheddar, or your preferred type; alternatively, use 2 tbsp of a spicy sandwich spread
  • 1/2 tsp Pepper freshly ground, black, is best
  • 1.5 tsp Salt or to taste

Instructions
 

Prepare the Coleslaw Filling

  • Combine grated carrot, finely chopped cucumber and tomato, shredded cabbage, and torn lettuce in a bowl.
  • Add mayonnaise, cheese (or spicy spread), salt, and pepper. Mix thoroughly.

Assemble the Sandwiches

  • Trim the crusts off the bread slices.
  • Spread softened butter on one side of each bread slice.
  • Spoon 2-3 tablespoons of coleslaw filling onto one buttered slice.
  • Top with another buttered slice, butter-side down.
  • Repeat with remaining ingredients to make all sandwiches.

Serve

  • Cut each sandwich in half and serve immediately. Enjoy!
