Instructions
 

  • Prepare the ginger juice by blending a coin-sized piece of ginger with a small amount of water until smooth.
  • Strain the ginger juice. Stir in the sugar and set aside.
  • In a bowl, combine the dosa batter, salt, and prepared ginger juice. Add a little water, if needed, to achieve a slightly thinner consistency than traditional dosa batter.
  • Heat a non-stick pan or griddle over medium heat. Add oil, ensuring it coats the surface evenly.
  • Pour a ladleful of batter onto the hot pan. Spread it slightly thicker than a dosa, about ΒΌ inch thick.
  • Cover the pan with a lid and cook for 2-3 minutes, or until the bottom is golden brown and the edges start to crisp. Covering the pan traps steam and helps the pancake cook evenly.
  • Flip the pancake and cook for another minute on the other side. This ensures both sides are cooked through but the top remains soft.
  • Transfer the uthappam to a serving plate. Drizzle generously with honey. Serve immediately.
