- 1 cup Bell Peppers finely chopped, red
- 1/2 cup Bell Peppers finely chopped, yellow
- 1/2 cup Spring Onions finely chopped, white and green parts separated if desired
- 1 tbsp Sesame Seeds toasted
- 1/4 cup Peanuts roasted and unsalted, roughly chopped
For the Honey-Ginger Vinaigrette
- 3 tbsp Sesame Oil
- 1 tbsp Peanut Butter depending on preference, smooth or crunchy
- 1 tbsp Soy Sauce low sodium preferred
- 1 tbsp Rice Vinegar or other mild vinegar
- 1 tbsp Honey
- 1/2 tsp Kosher Salt
- 1/2 tsp Ginger freshly grated
- 1/4 tsp Pepper black, freshly ground
- 1/4 tsp Garlic freshly grated
