Ingredients
- 12 Chicken nos leg
- 1 cup Hung Yogurt
- 2 tbsp Ginger Paste garlic
- 1 Onion large sized, size sliced
- 1.5 tsp Salt or as per taste
- 1 tbsp Fennel Seeds
- 2 tsp Pepper Powder white, you adjust as per your taste
- 3 tbsp Lemon Juice
- 1 tsp Cumin Seed jeera, roasted
- 1 tsp Cardamom Powder elaichi
- 1 pinch Nutmeg
- 1 tbsp Flour
- 1 tbsp Saffron Strands or milk soaked in milk
- Butter for basting
- 2 tbsp Ghee
- Chutney green, or serving for serving
- Onion rings

Instructions
Preparation
- Dry roast the gram flour in a pan until fragrant. Clean and wash the chicken drumsticks, then score them lightly.
Marinating the Chicken
- Heat ghee in a pan and fry the onion slices until golden brown. Blend the fried onions, hung curd, and saffron milk in a blender until smooth.
- In a large bowl, combine the roasted gram flour, nutmeg powder, white pepper powder, ginger-garlic paste, cumin powder, cardamom powder, lemon juice, fennel powder, and the blended curd mixture. Add the chicken drumsticks and mix well to coat evenly.
- Cover and marinate for at least 2 hours (preferably longer).
- Add salt to the marinated chicken and mix thoroughly.
Oven Roasting
- Preheat your oven to 250°C (480°F). Line a baking tray with foil and grease it lightly with oil or butter.
- Arrange the chicken drumsticks on the prepared tray.
- Bake for 20 minutes.
- Remove the tray, baste the chicken with melted butter, and reduce the oven temperature to 150°C (300°F).
- Roast for another 15 minutes.
- Flip the chicken pieces, baste again with butter, and roast for a further 10-15 minutes, or until golden brown and cooked through.
Serving
- Serve the Kesari Murg Tangdi Kababs hot, garnished with green chutney, onion rings, and lemon wedges.
