Preparation

  • Dry roast the gram flour in a pan until fragrant. Clean and wash the chicken drumsticks, then score them lightly.

Marinating the Chicken

  • Heat ghee in a pan and fry the onion slices until golden brown. Blend the fried onions, hung curd, and saffron milk in a blender until smooth.
  • In a large bowl, combine the roasted gram flour, nutmeg powder, white pepper powder, ginger-garlic paste, cumin powder, cardamom powder, lemon juice, fennel powder, and the blended curd mixture. Add the chicken drumsticks and mix well to coat evenly.
  • Cover and marinate for at least 2 hours (preferably longer).
  • Add salt to the marinated chicken and mix thoroughly.

Oven Roasting

  • Preheat your oven to 250°C (480°F). Line a baking tray with foil and grease it lightly with oil or butter.
  • Arrange the chicken drumsticks on the prepared tray.
  • Bake for 20 minutes.
  • Remove the tray, baste the chicken with melted butter, and reduce the oven temperature to 150°C (300°F).
  • Roast for another 15 minutes.
  • Flip the chicken pieces, baste again with butter, and roast for a further 10-15 minutes, or until golden brown and cooked through.

Serving

  • Serve the Kesari Murg Tangdi Kababs hot, garnished with green chutney, onion rings, and lemon wedges.
