- 1 inch Ginger finely grated or minced
- 1/4 tsp Turmeric Powder haldi
- 1 tsp Coriander Powder dhania
- 1 tsp Mustard Seeds rai
- 1 tsp Cumin Seeds
- 1/2 tsp Asafoetida hing
- 1.5 tsp Salt or to taste
Instructions
Preparing the Spice Base
- Heat oil in a pan. Add mustard seeds and cumin seeds. Once they splutter, add asafoetida and sauté briefly.
- Add finely chopped onions and sauté until translucent.
- Add the crushed ginger and garlic, and green chilies. Sauté for a minute until fragrant.
- Add finely chopped tomatoes and cook until softened.
Adding the Spinach
- Add the finely chopped spinach, turmeric powder, coriander powder, and salt. Mix well.
- Cover and cook until the spinach wilts and the water evaporates. Stir occasionally to prevent burning.
Finishing Touches
- Stir in the whisked yogurt and mix well. Cook for another 2-3 minutes until the yogurt is heated through and well combined.
