Vegetables

  • 1 bunch Spinach finely chopped
  • 1 medium Onion finely chopped
  • 1 medium Tomato finely chopped
  • 2 Chili adjust to taste, finely chopped, green

  • 2 tbsp Yogurt plain, whisked
  • 3 tbsp Oil mustard oil preferred, or vegetable oil
  • 1 tbsp Ghee desi ghee, for tempering, optional
  • 6 clove Garlic finely chopped, for garnish

Instructions
 

Preparing the Spice Base

  • Heat oil in a pan. Add mustard seeds and cumin seeds. Once they splutter, add asafoetida and sauté briefly.
  • Add finely chopped onions and sauté until translucent.
  • Add the crushed ginger and garlic, and green chilies. Sauté for a minute until fragrant.
  • Add finely chopped tomatoes and cook until softened.

Adding the Spinach

  • Add the finely chopped spinach, turmeric powder, coriander powder, and salt. Mix well.
  • Cover and cook until the spinach wilts and the water evaporates. Stir occasionally to prevent burning.

Finishing Touches

  • Stir in the whisked yogurt and mix well. Cook for another 2-3 minutes until the yogurt is heated through and well combined.

Garnishing

  • Heat ghee (or oil) in a separate pan. Add the finely chopped garlic cloves and sauté until golden brown and crispy.
  • Garnish the cooked Lehsuni Palak with the crispy garlic before serving. Serve hot with roti, naan or rice.
