Ingredients
For the Dal
- 1/2 cup Mung Bean split yellow mung beans; rinse thoroughly, yellow
- 3 cups Water for cooking the dal
- 1 cup Spinach fresh spinach, finely chopped
- 1/4 tsp Turmeric Powder haldi
- 1/4 tsp Chili Powder red
- 1/2 tsp Cumin Seeds
- 1.5 tsp Salt or to taste
- 1 tbsp Oil vegetable oil or ghee
For Tempering
- 1 tbsp Ghee ghee
- 1/2 tsp Cumin Seeds
- 5 clove Garlic finely chopped
Instructions
Prepare the Dal
- Wash the moong dal thoroughly. Pressure cook the dal with 3 cups of water until soft. Allow the pressure to release naturally, then mash the dal slightly with a spoon.
Sauté the Spinach
- Heat 1 tablespoon of oil in a pan. Add the chopped spinach, turmeric powder, red chili powder, cumin seeds, and salt. Sauté over medium-low heat for 5-7 minutes, until the spinach wilts and softens.
Combine and Simmer
- Add the cooked and mashed moong dal to the pan with the spinach. Mix well and simmer for another 5 minutes, allowing the flavors to meld.
Make the Tempering
- Heat the clarified butter (ghee) in a small pan. Add the cumin seeds and sauté until they splutter. Add the finely chopped garlic and sauté until golden brown and fragrant.
Finish and Serve
- Pour the tempering over the dal and spinach mixture. Stir gently to combine. Serve hot with steamed rice or roti.
