Ingredients
 

For the Carrot Pudding

  • 5 cup Carrots finely grated
  • 1 cup Milk
  • 1/2 cup Sugar adjust based on carrot sweetness, or to taste
  • 1/2 cup Mawa grated or finely crumbled
  • 1/4 cup Ghee desi ghee preferred for authentic flavor
  • 1 tsp Cardamom Powder freshly ground is best
  • 2 tbsp Raisins
  • 2 tbsp Almonds sliced or chopped
  • 2 tbsp Cashews sliced or chopped
  • 1/4 tsp Saffron Strands for added color and flavor. steep in 1/4 cup warm milk for 10 minutes before adding, optional

Instructions
 

Preparing the Carrots

  • Sauté the grated carrots in clarified butter (ghee) over medium heat for 4-5 minutes, stirring continuously until softened.

Cooking the Carrots in Milk

  • Add the milk to the carrots, stir well, and bring to a simmer. If using saffron milk, add it here. Reduce heat to low and continue to cook until the carrots are very tender (approximately 15-20 minutes) stirring occasionally to prevent sticking.

Sweetening and Thickening

  • Transfer the carrot mixture to a wide, non-stick pan. Stir in the sugar and cook over medium-high heat for 5-7 minutes, stirring continuously to prevent burning until the mixture slightly thickens.

Adding Khoya and Nuts

  • Add the khoya (Indian dried milk solids) and stir well to combine. Cook for another 2-3 minutes, stirring constantly until the khoya melts and blends with the carrot mixture. Stir in the raisins, almonds, cashews, and cardamom powder. Cook for 1-2 more minutes.

Serving

  • Remove from heat and let cool slightly. Serve warm or at room temperature. Garnish with additional nuts if desired.
