Ingredients
For the Carrot Base
- 500 gm Carrots peeled and finely grated
- 500 ml Milk whole milk preferred
- 8 Cardamom Pods green cardamom, lightly crushed
For the Halwa
- 100 gm Ghee clarified butter
- 200 gm Sugar granulated sugar or to taste
- 50 gm Raisins
- 25 gm Almonds slivered or shredded
- 1 tsp Saffron Strands for color and flavor (soak in 2 tbsp warm milk), optional
Instructions
Prepare the Carrot Base
- Peel and finely grate the carrots. In a saucepan, combine the grated carrots, milk, and crushed cardamom pods. Simmer over medium-low heat, stirring occasionally, until the milk is completely absorbed and the carrots are very tender. This may take 20-30 minutes. Set aside.
Make the Halwa
- Heat the desi ghee in a heavy-bottomed pan or kadai over medium-low heat. Add the cooked carrot mixture to the pan. Stir well to combine and cook for about 5-7 minutes, stirring constantly to prevent burning.
Add Sugar and Spices
- Gradually add the sugar and stir continuously. Continue cooking, stirring frequently, until the halwa thickens and turns a deep reddish-orange color, about 10-15 minutes. Stir in the soaked saffron (if using).
