Ingredients
 

Rice & Liquids

  • 1 cup Basmati Rice uncooked, white or brown
  • 2 cup Water for cooking rice, or vegetable broth

Tomato Puree

  • 1 1/2 cup Tomatoes about 3/4 lb. or medium sized, blended or pureed fresh tomatoes

Prepare the Rice

  • Wash the basmati rice thoroughly under cold water until the water runs clear. Drain well.

Make the Tomato Puree

  • Blend or puree the fresh tomatoes until smooth. Set aside.

Sauté Aromatics

  • Heat a little oil in a pot over medium heat. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Stir in turmeric, cumin, and chili powder, cooking for another minute until fragrant.

Combine and Simmer

  • Add the tomato puree to the pot and stir well. Bring to a simmer. Add the washed basmati rice, water (or broth), salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked through and the liquid is absorbed.

Stir in Herbs and Finish

  • Fluff the cooked rice with a fork. Stir in the chopped fresh mint and cilantro. Squeeze fresh lemon juice over the rice and mix gently.

Serve

  • Serve the Mint & Tomato Basmati Rice hot as a main course or a side dish. Garnish with extra mint leaves if desired.
