Instructions

Prepare the Dry Ingredients

  • Sift together the all-purpose flour, baking powder, and baking soda at least three times to aerate. Set aside.

Combine Wet Ingredients

  • In a large bowl, combine the sweetened condensed milk, vegetable oil (or ghee), and carbonated lemon-lime soda. Mix well.

Combine Wet and Dry

  • Gradually add the sifted dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix.

Divide and Color the Batter

  • Divide the batter into three equal portions. Leave one portion plain. In one portion, mix in the red food coloring, and in the other, mix in the green food coloring. Add a tiny bit of additional soda if the batter gets too thick.

Layer and Swirl

  • Preheat your oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan (or similar size). Pour a layer of the plain batter into the prepared pan. Top with alternating layers of red and green batter. Using a knife or toothpick, gently swirl the batters together to create a marble effect.

Bake and Cool

  • Bake for 45-60 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cake cool completely in the pan before frosting or serving.

Recipe Notes

Expert Tips for the Perfect Eggless Marble Cake

  • Don't overmix the batter! Overmixing can lead to a tough cake.
  • For a more intense marble effect, use gel food coloring instead of liquid.
  • Check the cake's doneness at 45 minutes. If it's still not baked through, continue baking in 5-minute intervals until done.
  • Allowing the cake to cool completely prevents it from crumbling when you cut it.
