Preheat & Prep

  • Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease the tin well.

Combine Dry Ingredients

  • In a medium bowl, whisk together the all-purpose flour, cornmeal, baking powder, and salt. Set aside.

Cream Butter & Sugar

  • In a large bowl, cream together the melted butter and sugar using a hand mixer or a stand mixer until light and fluffy.

Add Wet Ingredients

  • Beat in the milk and olive oil. Add the eggs one at a time, mixing well after each addition.

Combine Wet & Dry

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Fill & Bake

  • Fill each muffin cup about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. The muffins should be lightly golden brown.

Cool & Serve

  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
