Ingredients
Dry Ingredients
- 1 2/3 cup All-Purpose Flour
- 2/3 cup Cornmeal yellow cornmeal preferred
- 1 1/2 tbsp Baking Powder
- 1/2 tsp Salt
Wet Ingredients
- 1/2 cup Sugar granulated
- 1 cup Milk whole milk recommended
- 2 tbsp Olive Oil
- 1/4 cup Butter unsalted butter is preferred
- 2 Large Eggs
Optional additions
- 1/2 cup Blueberry or other desired mix-ins
Instructions
Preheat & Prep
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease the tin well.
Combine Dry Ingredients
- In a medium bowl, whisk together the all-purpose flour, cornmeal, baking powder, and salt. Set aside.
Cream Butter & Sugar
- In a large bowl, cream together the melted butter and sugar using a hand mixer or a stand mixer until light and fluffy.
Add Wet Ingredients
- Beat in the milk and olive oil. Add the eggs one at a time, mixing well after each addition.
Combine Wet & Dry
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Fill & Bake
- Fill each muffin cup about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. The muffins should be lightly golden brown.
Cool & Serve
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
