  • Heat canola oil in a medium skillet over medium heat. Add apples, 1/4 cup brown sugar, 1 tablespoon blackstrap molasses, 1/2 teaspoon apple cider vinegar, and cinnamon. Sauté for 2-3 minutes until tender-crisp.
  • Set aside.

Make the Fritter Batter

  • In a double boiler or heat-safe bowl set over simmering water, whisk together the remaining brown sugar and canola oil until melted and smooth.
  • Remove from heat. Gently whisk in eggs one at a time, then stir in vanilla extract. Let cool slightly.
  • In a separate bowl, whisk together the whole wheat bran, all-purpose flour, baking soda, nutmeg, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Gently fold in the sautéed apples and their juices.

Bake and Glaze

  • Spoon batter evenly into the prepared muffin tin or baking dish, filling each cup about ¾ full.
  • Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  • While the fritters are baking, prepare the glaze: Whisk together powdered sugar, hot water, and apple cider until smooth and pourable.
  • Once the fritters are baked, let them cool slightly in the pan before transferring them to a wire rack to cool completely.
  • Drizzle with the glaze and let it set before serving.
