Ingredients
For the Sautéed Apples:
- 1 Apple and cut into bite-sized pieces (granny smith or honeycrisp recommended), cored, medium, peeled
- 1/4 cup Sugar brown
- 1 tsp Cinnamon ground
- 1 tbsp Canola Oil or unsalted butter
- 1 tbsp Blackstrap Molasses
- 1/2 tsp Apple Cider Vinegar
For the Fritter Batter:
- 3/4 cup Wheat Bran whole
- 1/4 cup All-Purpose Flour
- 1 tsp Baking Soda
- 1/4 tsp Nutmeg ground
- 1/2 tsp Salt
- 1/4 cup Canola Oil or unsalted butter
- 1/2 cup Sugar brown
- 2 Eggs
- 1 tsp Vanilla Extract
For the Glaze:
- 1 cup Sugar powdered
- 2-3 tbsp Water hot
- 1 tbsp Apple Cider
Instructions
Prepare the Apples
- Preheat oven to 400°F (200°C). Grease a muffin tin or baking dish.
- Heat canola oil in a medium skillet over medium heat. Add apples, 1/4 cup brown sugar, 1 tablespoon blackstrap molasses, 1/2 teaspoon apple cider vinegar, and cinnamon. Sauté for 2-3 minutes until tender-crisp.
- Set aside.
Make the Fritter Batter
- In a double boiler or heat-safe bowl set over simmering water, whisk together the remaining brown sugar and canola oil until melted and smooth.
- Remove from heat. Gently whisk in eggs one at a time, then stir in vanilla extract. Let cool slightly.
- In a separate bowl, whisk together the whole wheat bran, all-purpose flour, baking soda, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Gently fold in the sautéed apples and their juices.
Bake and Glaze
- Spoon batter evenly into the prepared muffin tin or baking dish, filling each cup about ¾ full.
- Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- While the fritters are baking, prepare the glaze: Whisk together powdered sugar, hot water, and apple cider until smooth and pourable.
- Once the fritters are baked, let them cool slightly in the pan before transferring them to a wire rack to cool completely.
- Drizzle with the glaze and let it set before serving.
