- 170 gm Chocolate chopped; bittersweet or semisweet, dark
- 0.25 cup Olive Oil
- 0.25 cup Plain Greek Yogurt
- 1 tsp Vanilla Extract

- 0.75 cup Almond Flour
- 0.5 tsp Baking Powder
- 0.5 cup Coconut Sugar
- 1 tsp Salt
Instructions
Prepare the Chocolate
- Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides to lift the brownies out later.
- Melt the dark chocolate in a double boiler or microwave. Stir in the olive oil until smooth.
Combine Wet Ingredients
- In a separate bowl, whisk together the melted chocolate mixture, Greek yogurt, and vanilla extract until well combined.
Combine Dry Ingredients
- In another bowl, whisk together the almond flour, baking powder, coconut sugar, and salt.
Combine Wet and Dry Ingredients
- Gently fold the dry ingredients into the wet ingredients using a rubber spatula until just combined. Do not overmix.
Bake the Brownies
