- 1 tsp Turmeric Powder haldi
- 1 tsp Chili Powder red
- 1 tsp Coriander Powder dhania
- 1/4 tsp Asafoetida hing

- 2 tbsp Mustard Oil
Instructions
- Wash and chop the dill. Set aside.
- Wash the arbi thoroughly. Boil until tender. Peel and discard the skins.
- Heat the mustard oil in a pan over medium heat. Once the oil shimmers and is hot, add the carom seeds and asafoetida. Sauté briefly until fragrant. This releases their aromatic oils.
- Add the turmeric powder, coriander powder, and red chili powder to the pan. Stir-fry for a few seconds until fragrant, being careful not to burn the spices.
- Add the tomato purée and stir well to combine. Cook for a minute or two until the purée slightly darkens.
- Add the chopped dill to the pan. Cover and cook for about a minute to wilt the dill slightly.
- Add the boiled arbi and salt to the pan. Stir gently to coat the arbi with the spice mixture. Cover and cook for another minute to allow the flavors to meld.
- Uncover and stir-fry for a final minute to ensure everything is heated through. Remove from heat.
