Ingredients
For the Stir-Fry
- 1 Tbsp Olive Oil
- 1/2 tsp Garlic minced
- 1 small Onion finely chopped (about 2 tbsp)
- 1/2 tsp Ginger-Garlic Paste
- 2 Tbsp Carrot diced
- 1 Chili green, optional
- 1/4 cup Corn Kernels
- 1 1/2 drops Vinegar optional
- 1 pinch Chinese Powder five-spice
- Pepper Powder optional, to taste, white
- 1 1/2 tsp Salt or to taste
Instructions
- Rinse the barley once and soak in 2 cups of water for 2-3 hours. This helps soften the barley for quicker cooking.
- Pressure cook the soaked barley with the same water for one whistle on high heat. Then, reduce the heat to low and simmer for 5 minutes. This ensures the barley is cooked through but still retains a pleasant chew.
- Allow the pressure to release naturally. Drain the cooked barley, reserving the cooking liquid for later use (such as in soup). Rinse the barley with 1 cup of fresh water and drain again. This removes excess starch and prevents the grains from sticking together during stir-frying.
- Heat the olive oil in a non-stick wok or large skillet over medium heat. Add the minced garlic and sauté for a few seconds until fragrant.
- Add the chopped onion and a pinch of salt. Sauté, stirring occasionally, until the onions soften and turn translucent, about 5-7 minutes.
- Add the ginger-garlic paste and sauté for 30 seconds to 1 minute until fragrant. This adds a depth of flavor to the stir-fry.
- Add the diced carrots and increase the heat to high. Sauté until they develop a slight char, about 2-3 minutes. Add the green chili (if using) and continue to sauté until the carrots are tender-crisp.
- Add the corn kernels and stir-fry for 2-3 minutes until they are heated through and slightly tender.
- Add the cooked barley and vinegar (if using). Season with salt to taste. Stir continuously for 3-4 minutes, allowing the barley to absorb the flavors of the other ingredients.
- Add the Chinese five-spice powder and white pepper powder (if using). Taste and adjust salt if needed. Stir for another minute to combine all the flavors.
