Ingredients
 

Chickpeas

  • 1 cup Chickpea dried, soaked overnight or for at least 8 hours

Prepare the Chickpeas

  • Wash and soak 1 cup of dried chickpeas overnight or for at least 8 hours. Pressure cook the chickpeas with a little salt until soft. Once the pressure releases, mash 4 tablespoons of cooked chickpeas and set aside.

Grind the Aromatics

  • Grind the onion, tomatoes, ginger, and garlic into a smooth paste.

Sauté the Spices

  • Heat vegetable oil in a pan over medium heat. Add the cumin seeds, cardamom pods, cinnamon stick, cloves, and bay leaves. Sauté until fragrant and the spices splutter.

Cook the Masala

  • Add the ground onion-tomato mixture to the pan. Cook for 8-10 minutes, stirring occasionally, until the raw smell is gone and the masala is slightly dry.

Add Dry Spices and Water

  • Stir in the red chili powder, garam masala, turmeric powder, and coriander powder. Sauté for a minute or two until fragrant. Add 2 tablespoons of water, and cook until the mixture is dry.

Combine and Simmer

  • Add the cooked chickpeas and 1/4 cup of water (or more if needed). Bring to a boil and then reduce heat and simmer for about 10 minutes.

Finish and Serve

  • Season with salt to taste. Stir in the mashed chickpeas, and let it simmer for another 3 minutes on low heat. Remove from heat and stir in the kasuri methi, chopped coriander leaves, and sugar. Your delicious Chickpea Masala is ready! Serve hot with your favorite flatbread or rice.

  • For a richer flavor, use ghee (clarified butter) instead of vegetable oil.
