  • 1 cup Chickpeas kabuli chana, boiled or canned (drained and rinsed)
  • 3 Onion medium-sized, thinly sliced
  • 2 Onion chopped, medium-sized
  • 2 Tomato chopped, medium-sized

  • 1.5 tsp Salt or to taste
  • 2 tbsp Vegetable Oil or any cooking oil of your choice
  • 1 cup Water optional, for desired consistency

Instructions
 

Preparing the Tomato-Onion Puree

  • Grind 2 chopped tomatoes and 2 chopped onions into a smooth paste using a blender or food processor.

Sautéing Aromatics

  • Heat vegetable oil in a pan or pot over medium heat. Add the minced green chilies and ginger-garlic paste. Sauté for about 1 minute until fragrant.

Building the Flavor Base

  • Add the thinly sliced onions and sauté for 2-3 minutes until softened and translucent.

Incorporating the Puree and Spices

  • Stir in the tomato-onion puree and chana masala powder. Cook for 5-7 minutes, stirring occasionally, until the oil starts to separate from the mixture.

Adding the Finishing Touches

  • Add the garam masala and amchur powder. Mix well and cook for another minute.

Simmering the Chana Masala

  • Stir in the boiled chickpeas and salt. Add water if needed to reach your desired consistency, or leave it drier for a thicker curry. Simmer for 10-15 minutes, allowing the flavors to meld and the chickpeas to heat through. Stir occasionally to prevent sticking.
