Marinate the Chicken

  • Marinate the chicken leg quarters with hung curd, salt, red chili powder, and ginger-garlic paste. Let it marinate for at least 1 hour, or preferably longer in the refrigerator.

Second Marinade & Freeze

  • Add the Nando's Peri-Peri sauce to the chicken marinade. Mix well to coat the chicken evenly. Place the marinated chicken in a freezer-safe bag or container and freeze for 1 hour. This helps to lock in the flavors and ensures the chicken cooks evenly.

Bake the Chicken

  • Preheat your oven to 350°F (175°C). Brush the chicken with olive oil. Bake for 35-40 minutes, or until the chicken is cooked through and the juices run clear when pierced with a fork.
