Ingredients
Chicken & Marinade
- 1.5 lb Chicken Leg Quarters about 2 large leg quarters, or equivalent
- 1 cup Hung Yogurt yogurt
- 1/4 cup Nando'S Peri-Peri Sauce or your favorite brand
- 2 tbsp Chili Powder red
- 2 tbsp Ginger Garlic Paste
- 1.5 tsp Salt or to taste
Garnish & Finishing
- 1 tbsp Olive Oil
- 1 tbsp Butter melted
- 1/4 cup Coriander finely chopped
- 1 tsp Oregano dried
- 1 tbsp Pepper Flakes red
Instructions
Marinate the Chicken
- Marinate the chicken leg quarters with hung curd, salt, red chili powder, and ginger-garlic paste. Let it marinate for at least 1 hour, or preferably longer in the refrigerator.
Second Marinade & Freeze
- Add the Nando's Peri-Peri sauce to the chicken marinade. Mix well to coat the chicken evenly. Place the marinated chicken in a freezer-safe bag or container and freeze for 1 hour. This helps to lock in the flavors and ensures the chicken cooks evenly.
Bake the Chicken
- Preheat your oven to 350°F (175°C). Brush the chicken with olive oil. Bake for 35-40 minutes, or until the chicken is cooked through and the juices run clear when pierced with a fork.
Finish & Serve
