Ingredients
Dry Ingredients
- 2.5 cup Semolina fine
- 1 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 tsp Salt
Wet Ingredients
- 1 cup Yogurt
- 1 cup Milk
- 1 cup Sugar granulated
- 1/2 cup Vegetable Oil
Mix-ins
- 1/2 cup Tutti Frutti raisins, chopped walnuts, or other dried fruits can be substituted.
Instructions
Prepare the Batter
- Mix together the semolina, yogurt, milk, sugar, and vegetable oil in a large bowl. Let the mixture rest for 15 minutes to allow the semolina to absorb the liquids and slightly ferment.
Adjust Consistency
- The batter should resemble a thick pancake batter or idli batter. If it's too thick, add a little more milk until you reach the desired consistency.
Incorporate Leavening Agents
- Add the baking powder, baking soda, and salt to the batter. Gently mix until just combined. Be careful not to overmix.
Add Mix-ins
- Gently fold in the tutti frutti or your chosen mix-ins. Avoid overmixing, as this can make the cake tough.
Prepare the Air Fryer
- Lightly grease a 6-inch round baking pan with oil or cooking spray. Pour the batter into the prepared pan. Evenly distribute the batter and lightly tap the pan to remove any air bubbles.
Air Fry the Cake
- Preheat your air fryer to 200°F (93°C) for 5 minutes. Then, place the baking pan in the air fryer and bake at 160°F (71°C) for 15-20 minutes, or until a toothpick inserted into the center comes out clean. Check at 15 minutes; cooking time may vary depending on the air fryer model.
Cool and Serve
- Remove the cake from the air fryer and let it cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely. Once cooled, cut into slices and serve.
Recipe Notes
Expert Tips
- For a richer flavor, use full-fat yogurt and milk.
- If you don't have an air fryer, this cake can be baked in a preheated oven at 350°F (175°C) for 25-30 minutes.
- Don't overmix the batter, as this can lead to a tough cake.
- Experiment with different mix-ins! Chocolate chips, cranberries, or spices like cinnamon would be delicious additions.
