- 1 Banana mashed, ripe
- 2/3 cup Coconut Milk thick
- 2 tbsp Whole Wheat Flour whole wheat flour; or use semolina for a crispier texture
- 1/4 tsp Ginger freshly grated
- 1/5 tsp Peppercorns black, freshly ground
- 1 tbsp Honey
For Cooking & Serving
- 3 slices Bread brown
- 1 tbsp Canola Oil or other cooking oil
- 2 slices Banana for garnish (optional)
Instructions
Prepare the Bread
- Cut off the crusts of the brown bread and slice each slice in half.
Make the Batter
- Mash the ripe banana in a bowl. Add the coconut milk, wheat flour, grated ginger, freshly ground peppercorns, and honey. Mix thoroughly until well combined.
Cook the French Toast
