Ingredients
For the Adai Batter (make ahead or use store-bought)
- 1 cup Adai Batter use a ready-made batter or prepare your own (see recipe link in notes)
For the Egg Lentil Dosa
- 3 Eggs
- 1 medium Onion finely chopped
- 1/4 tsp Cumin Seeds
- 1 Curry Leaf Sprig
- 1/4 tsp Turmeric Powder haldi
- 1/4 tsp Chili Powder
- 1.5 tsp Salt or to taste
- 2 tbsp Oil for cooking
Instructions
Preparing the Dosa Batter
- In a mixing bowl, combine the adai batter, finely chopped onion, cumin seeds, curry leaves, turmeric powder, chili powder, and salt. Mix well to ensure all ingredients are evenly distributed.
Cooking the Egg Lentil Dosa
- Heat a non-stick tawa or griddle over medium heat. Add 1 tsp of oil to lightly grease the surface.
- Pour approximately 1/4 cup of the prepared batter onto the hot tawa. Spread it gently into a thin, circular crepe using the back of a spoon or a spatula.
- Crack one egg onto the center of the dosa. Using a fork, gently spread the egg white evenly over the dosa, ensuring the yolk remains slightly intact.
- Sprinkle a pinch of chili powder and salt over the egg. Drizzle a small amount of oil around the edges of the dosa.
- Allow the dosa to cook until the edges appear golden brown and the egg is set. Gently flip the dosa and cook the other side for another minute until lightly golden brown.
- Remove the dosa from the tawa and serve immediately. Repeat this process with the remaining batter and eggs.
Serving Suggestions
- Serve hot with your favorite sambar and coconut chutney for a complete and authentic South Indian breakfast experience.
Recipe Notes
Expert Tips for the Perfect Egg Lentil Dosa
- Adai Batter Consistency: For optimal results, ensure your adai batter has the right consistency. It should be slightly thick, not watery. Add a little water if necessary to adjust.
- Don't Overcrowd the Pan: Cook dosas one at a time to ensure even cooking and prevent sticking. If the tawa is too crowded, the dosa will not cook properly and become mushy.
- Oil is Key: Don't be shy with the oil! A little oil prevents sticking and adds to the dosa's crispness. Drizzle as instructed, adding more if needed to keep it from sticking.
- Adjust Spices to Taste: Feel free to adjust the amount of chili powder and salt according to your preference. If you enjoy spicier food, add more chili; if not, reduce it.
- Leftover Batter: Leftover adai batter can be stored in the refrigerator for up to 3 days. Give it a good stir before using.
