Ingredients
 

Vegetables

  • 1 medium Onion finely chopped
  • 2 medium Zucchini diced
  • 2 medium Bell Peppers any color, diced. alternatively use 2-3 fresh chili peppers, finely chopped, for extra heat
  • 2-3 clove Garlic minced

Sauce & Seasoning

  • 500 gm Tomato Sauce passata or crushed tomatoes work well
  • 1-2 tbsp Olive Oil
  • 1 tsp Salt or to taste
  • 1/2 tsp Pepper black, freshly ground, or to taste

Optional additions

  • 1/4 tsp Oregano dried, or 1 tbsp fresh
  • 1/4 tsp Basil dried, or 1 tbsp fresh

Instructions
 

Preparation

  • Chop the onion, bell peppers, and zucchini into bite-sized pieces. Mince the garlic.

Sautéing Aromatics

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and garlic and sauté for 3-5 minutes, until softened.

Simmering the Sauce

  • Add the diced zucchini and bell peppers to the pot. Stir in the tomato sauce, salt, and pepper. Add oregano and basil if using.

Cooking the Sauce

  • Bring the sauce to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, or until the vegetables are tender. Stir occasionally.

Serving

  • Remove from heat and let cool slightly before serving over your favorite pasta. Garnish with fresh basil if desired.
