Ingredients

- ½ cup Flattened Rice flattened rice
- ½ cup Sugar
- 2 cup Water
Instructions
- In a pan, dry roast the poha over low heat for about 5 minutes until fragrant. This removes excess moisture and enhances the nutty flavor. Transfer to a plate to cool. Once cooled, coarsely grind the roasted poha.
- In the same pan, lightly toast the cashews until golden brown and set aside for garnish. Add the coarsely ground poha to the pan and roast for 2-3 minutes over low heat to further develop its flavor.
- In a separate vessel, bring 2 cups of water to a rolling boil. Carefully pour the boiling water over the roasted poha and cook over medium heat, stirring occasionally, until the water is fully absorbed and the poha is cooked through.
- Add the sugar, ground cardamom, and saffron (or food coloring) to the cooked poha. Mix well and continue to cook over low heat, stirring constantly, until the mixture thickens slightly.
- Add the ghee and continue to cook, stirring continuously, until the kesari starts to leave the sides of the pan. This indicates that the ghee is fully incorporated and the kesari has reached the desired consistency. Remove from heat and garnish with the toasted cashews.
