Ingredients
- 1 cup Milk
- 6 tsp Ghee
- 1 cup Semolina or rava rava
- 1/2 cup Sugar
- 1 tsp Cardamom Powder elaichi
- 2 tsp Almond
- 1.5 Fruits dry, dryfruits
- 2 cup Beetroot Juice
Instructions
Prepare the Beetroot Juice
- Boil the beetroot with 1/2 cup of water until tender, about 20-25 minutes. Blend until smooth and strain to remove any fibers. Set aside.
Roast the Semolina
- In a pan, heat 2 tablespoons of ghee over medium heat. Add the semolina and roast, stirring constantly, until lightly golden brown and fragrant (about 5-7 minutes). Set aside.
Cook the Kesari
- In the same pan, add the remaining 4 tablespoons of ghee. Add the strained beetroot juice and bring to a simmer. Slowly add the roasted semolina, stirring continuously to prevent lumps.
Incorporate Remaining Ingredients
- Cook for 5 minutes, then add the milk. Stir well and bring to a gentle simmer. Add the sugar and cardamom powder. Stir until the sugar dissolves completely.
Finish and Serve
- Continue cooking for another 5-7 minutes, or until the mixture thickens and starts to leave the sides of the pan. Stir in the chopped almonds and dried fruits. Remove from heat and let cool slightly before serving warm or at room temperature.
