Cook the Kesari

  • In the same pan, add the remaining 4 tablespoons of ghee. Add the strained beetroot juice and bring to a simmer. Slowly add the roasted semolina, stirring continuously to prevent lumps.

  • Cook for 5 minutes, then add the milk. Stir well and bring to a gentle simmer. Add the sugar and cardamom powder. Stir until the sugar dissolves completely.

Finish and Serve

  • Continue cooking for another 5-7 minutes, or until the mixture thickens and starts to leave the sides of the pan. Stir in the chopped almonds and dried fruits. Remove from heat and let cool slightly before serving warm or at room temperature.
