- Coriander Leaves chopped, for garnish, fresh
Instructions
- Heat the oil in a pressure cooker over medium heat. Add the sliced onions and sauté until they turn a light golden brown. This builds a flavorful base for the biryani.
- Add the ginger-garlic paste and cook for 1 minute over low heat, stirring constantly. This allows the raw flavors of the paste to mellow.
- Add the chopped tomatoes, red chili powder, coriander powder, garam masala, and turmeric powder. Sauté for 1 minute over high heat. Then, add 1/2 cup of water, cover the pressure cooker, and cook until the oil separates from the masala. This creates a rich and flavorful sauce.
- Add the halved potatoes, salt, biryani masala, and chopped coriander leaves. Mix well and cook for 1 minute over low heat, allowing the potatoes to absorb the spices.
- Add the basmati rice and enough water to cook the rice perfectly (usually a 2:1 ratio of water to rice). Cover the pressure cooker and cook for 3 whistles. This ensures the rice is cooked through and infused with the flavors of the spices and vegetables.
