Ingredients

- 250 gm Garlic Cloves
Spices
- 2 tbsp Fennel Seeds
- 2 tsp Carom Seeds
- 2 tsp Cumin Seeds roasted and crushed
- 2 tbsp Kashmiri Chili Powder red
- 2 tbsp Mustard Paste
- Salt to taste
Instructions
- Peel the garlic cloves. Rinse them under cold water and thoroughly pat them dry. This ensures a crisp pickle.
- Dry roast the fennel and carom seeds in a pan over medium heat until fragrant. Lightly crush the seeds using a mortar and pestle. Roasting enhances their flavor.
- In a mixing bowl, combine the dried garlic cloves, crushed fennel seeds, crushed carom seeds, Kashmiri red chili powder, roasted and crushed cumin seeds, mustard paste, and salt.
- Mix all the ingredients thoroughly, ensuring the garlic cloves are well coated. Transfer the mixture to a clean, sterilized glass jar. Seal the jar tightly.
- Allow the pickle to mature for at least one week at room temperature. The garlic will soften over time. For a more intense flavor, place the jar in direct sunlight for 2-3 days. This helps to develop the flavors further.
