Ingredients
Spices and Flavorings
- 1 tsp Chili Powder red
- 2 tsp Turmeric Powder
- 1/4 tsp Asafoetida hing
- 1 1/2 tsp Salt or to taste
Main Ingredients
- 250 gm Garlic Cloves
- 25 gm Mango Powder amchur, dry
- 25 gm Mango Powder amchur, dry, roasted
- 250 gm Mustard Oil
- 100 gm Mustard Seeds ground
- 50 gm Rai Seeds black mustard seeds, ground
Instructions
- In a mixing bowl, combine the garlic cloves, salt, turmeric powder, red chili powder, asafoetida, ground mustard seeds, ground rai seeds, dry mango powder, roasted dry mango powder, and mustard oil.
- Mix all ingredients thoroughly, ensuring the garlic cloves are well coated with the spice mixture.
- Transfer the mixture to a clean, sterilized glass jar. This helps prevent spoilage and ensures a longer shelf life for your pickle.
- Seal the jar tightly with a lid. Store the jar in a cool, dark place for two weeks. This allows the flavors to meld and the garlic to pickle properly.
- After two weeks, the Indian Garlic Pickle is ready to be enjoyed! The pickle will continue to develop flavor over time.
Recipe Notes
Good To Know
- For an extra crunch, briefly toast the garlic cloves in a dry pan before pickling, just until they start to turn golden—this enhances both texture and depth of flavor.
- If you prefer a milder pickle, blanch the garlic cloves in boiling water for 1-2 minutes and peel off any tough skins before adding them to the spice mix.
- To give the pickle a unique regional twist, substitute part of the dry mango powder with finely chopped sun-dried tomatoes or add a handful of roasted methi (fenugreek) seeds for a slightly bitter undertone.
Expert Tips
- Experiment with different vinegars like apple cider vinegar or white wine vinegar for unique flavor profiles.
- Adjust the amount of chili powder to control the heat level of the pickle.
- Add a pinch of turmeric for a vibrant color and added health benefits.
Storage Instructions
- Store the pickle in a sterilized, airtight glass jar and keep it in a cool, dark place for at least 3-5 days before consuming to allow the flavors to meld.
- Refrigerate after opening to prolong shelf life.
