  • Adding the vegetables to hot oil helps them sear quickly and retain their vibrant color and nutrients.
  • Season the vegetables with salt. This enhances their natural flavors and draws out excess moisture.
  • Add the fresh herbs and fruit vinegar. Stir to combine. The vinegar adds a touch of tanginess that balances the richness of the sesame oil.

  • Add the cooled, cooked rice to the skillet. Gently stir-fry the rice with the vegetables and herbs until everything is heated through and well combined. Using cooled rice prevents the fried rice from becoming mushy.
  • Taste and adjust seasonings as needed. Serve immediately. This fried rice is delicious on its own and doesn't require any side dishes.

Recipe Notes

Expert Tips

  • For a richer flavor, consider using bone-in chicken thighs instead of boneless, skinless breasts.
  • Adjust the cooking time based on the thickness of your chicken pieces. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
  • Don't overcrowd the pan when browning the chicken. Work in batches to ensure even cooking and a nice sear.

Storage Instructions

  • Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
