Instructions

Preparation

  • Wash the green beans thoroughly under running water and pat them dry with a clean kitchen towel. Trim the ends of the beans.

Coating the Green Beans

  • In a large mixing bowl, combine the green beans, refined flour, salt, and black pepper (if using). Toss gently to coat the beans evenly, ensuring they are mostly dry. Excess moisture will prevent crisping.

Frying the Green Beans

  • Heat the vegetable oil in a wok or large pan over medium-high heat. Once the oil is hot (a pinch of flour should sizzle immediately), carefully add the green beans in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 4-5 minutes per batch. Remove the fried green beans and place them on a paper towel-lined plate to drain excess oil.

Mixing with Schezwan Sauce

  • Transfer the crispy green beans to a mixing bowl. Add the Schezwan sauce and toss gently to coat all the beans evenly.

Serving

  • Serve immediately and enjoy your delicious Crispy Fried Schezwan Green Beans!

Recipe Notes

Expert Tips for Perfect Schezwan Green Beans

  • For extra crispy green beans, double-fry them. Fry once until partially cooked, then remove, let cool slightly, and fry again until golden and extra crispy.
  • Adjust the amount of Schezwan sauce according to your spice preference. Start with less and add more if needed.
  • Don't overcrowd the pan when frying. Work in batches to ensure even cooking and crisping.
  • For a more complex flavor profile, consider adding a pinch of garlic powder or onion powder to the flour coating.
