Ingredients
- 4 tablespoons olive oil extra-virgin
- 1 lemon juiced and divided
- Kosher salt to taste
- 1/2 tsp Black pepper Freshly ground, to taste
- 1 teaspoon Italian seasoning or dried oregano
- 4 Chicken breasts boneless skinless, pounded to an even thickness
- 4 slices Mozzarella cheese
- 3 Tomatoes sliced
- 2 cloves Garlic minced
- 1 tablespoon Basil fresh, chopped
- 2-3 tsp Parmesan Freshly grated, for serving
Instructions
- Combine 3 tablespoons olive oil, half of the lemon juice, salt, black pepper, and Italian seasoning in a large bowl.
- Add the chicken breasts and coat them well with the seasoning mixture.
- Heat the remaining tablespoon of olive oil in a skillet over medium heat.
- Cook the chicken for 6 to 8 minutes per side, until golden and cooked through to 165°F.
- Combine the chopped tomatoes, garlic, basil, remaining lemon juice, salt, and black pepper in a separate bowl.
- Place one slice of mozzarella over each chicken breast.
- Cover the skillet and cook for 2 to 3 minutes, until the mozzarella melts.
- Transfer the chicken to a serving plate.
- Spoon the fresh tomato topping over the chicken.
- Finish with freshly grated Parmesan and serve warm.
