Ingredients

- 1 cup Tomatoes roma or similar variety recommended, finely chopped
- 1/4 cup Onion finely chopped, red
- 2 tbsp Coriander finely chopped, finely chopped; or substitute with 2 tbsp fresh basil, fresh
- 1 tsp Oregano dried
- 1 tbsp Lemon Juice freshly squeezed
- 1-2 tsp Salt to taste
- 1-2 tsp Pepper black, freshly ground, to taste
For the Bruschetta
- 1 French Baguette
- 2 tbsp Butter softened
- 1/2 cup Mozzarella Cheese fresh, grated
Instructions
Prepare the Tomato Mixture
- Combine chopped tomatoes, red onion, coriander (or basil), oregano, lemon juice, salt, and pepper in a bowl. Mix well.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld. This step is optional but highly recommended for best results.
Prepare the Baguette
- Preheat oven to 400°F (200°C).
- Slice the baguette into 1/2-inch thick slices.
- Spread softened butter on one side of each baguette slice.
- Arrange the baguette slices on a baking sheet.
- Bake for 5-7 minutes, or until the butter is melted and the bread is lightly toasted.
Assemble and Bake the Bruschetta
- Remove the baking sheet from the oven.
- Spoon the tomato mixture evenly onto each toasted baguette slice.
- Top with grated mozzarella cheese.
- Return the baking sheet to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
