About Dhaba Chicken (Rustic Chicken Curry)
A rustic chicken curry that is popular in eateries called dhaba, especially in north of India, and served mostly with naan or tandoori roti.

Ingredients
- 1 kg Chicken
- 4-5 tbsp Mustard Oil or any oil that you desire, Use mustard oil for authentic flavours
- 4 Onions medium, finely sliced
- 1 tsp Ginger paste
- 1 tsp Garlic paste
- ½ tsp Turmeric Powder
- 2 tsp Coriander Powder
- 1 tsp Chilli Powder adjust to taste, mine wasn’t too hot
- 1 – 1½ tsp Cumin Powder roasted
- 1 tsp Garam Masala Powder
- 1 tbsp Yoghurt
- 3 Green chillies split in two
- 1 tsp Fenugreek Leaves dried & crushed
- Salt to taste
Instructions
- Clean, wash and drain the chicken.
- Heat a heavy bottomed pan or a wok and add the oil. If using mustard oil, smoke the oil.
- Lower the heat and carefully add onions. Increase heat and fry till it begins to turn brown in colour.
- Lower the flame and add a few tablespoons of water and then add the ginger garlic paste.
- Fry till the water evaporates and the ginger garlic starts becoming aromatic. (ensure to constantly keep stirring)
- Add the chicken.
- Sear the chicken on a high heat for 2-3 minutes and then reduce the flame to medium low.
- Add the spices – turmeric, coriander powder, chilli powder, cumin powder, garam masala powder and salt.
- Stir well and then add the yogurt, crushed dry fenugreek leaves and green chillies.
- Fry further for about 5 minutes on low heat.
- Add 3-4 tbsp of water and cook till chicken is done (cooking time can vary depending on how small or large the pieces are)
- Replenish the chicken with water if it starts to turn dry.
- Adjust the consistency of the chicken according to your preference. Add more water if you prefer it with curry and add less water if you desire to have it towards thick consistency.
- Remove in a serving bowl and garnish with fresh coriander.
- Serve with Naan or Tandoori Roti.
