Ingredients
For the Oats Masala:
- 1 cup Rolled Oats
- 1/4 tsp Mace Powder
- 1/2 tsp Peppercorns black
- 1 Bay Leaf
- 1/2 Cinnamon Stick
For Chicken Marinate:
- 1.5 lb Chicken bone-in, cut into 1-inch pieces, skin-on
- 1 1/2 tsp Turmeric Powder
- 1 tsp Salt
- 2 tbsp Oats Masala homemade or store-bought
- 2 tbsp Yogurt
- 1 tbsp Chili Powder
- 1 tbsp Vegetable Oil
For the Chicken Curry:
- 3 tbsp Vegetable Oil
- 1/4 tsp Mace Powder
- 1/2 tsp Carom Seeds ajwain
- 1 tsp Fenugreek Leaves kasuri methi, and 1 tsp dried mint leaves, dried
- 1 medium Onion finely chopped
- 3 Chilies finely chopped, green
- 1 tsp Turmeric Powder
- 1/2 tsp Salt
- 1/2 tbsp Chili Powder adjust to taste
- 3 tbsp Vegetable Puree e.g., onion, or a mix, tomato
- 1/2 cup Vegetable Stock or water
- 1/2 tbsp Ginger-Garlic Paste
- 2 tbsp Yogurt
- 1/2 tbsp Biryani Masala
- 2 tbsp Coriander chopped, for garnish
- 2 tbsp Mint Leaves chopped, for garnish, fresh
For the Chicken Skewers (Optional):
- 250 gm Chicken use leftover chicken marinade or prepare separately, marinated
- 1 1/2 tbsp Tandoori Masala or other preferred spice blend
- 2 tbsp Ghee or vegetable oil
- 8 Wooden Skewers soaked in water for at least 30 minutes
Instructions
Prepare the Oats Masala
- Dry roast rolled oats, mace powder, black peppercorns, bay leaf, and cinnamon stick until fragrant. Let cool completely, then grind into a fine powder using a spice grinder or blender. Store in an airtight container.
Marinate the Chicken
- In a large bowl, combine the chicken pieces with turmeric powder, salt, oats masala, yogurt, and chili powder. Mix well, cover, and refrigerate for at least 24 hours (longer is better).
Make the Chicken Curry
- Heat oil in a large pan or pot over medium heat. Add mace powder, carom seeds, dried fenugreek leaves, and dried mint leaves. Sauté briefly until fragrant.
- Add finely chopped onion and green chilies. Sauté until softened. Stir in turmeric powder, salt, and chili powder. Cook for a few minutes.
- Add the marinated chicken pieces and mix well. Cover and cook for 5 minutes.
- Remove the lid, stir in the ginger-garlic paste, vegetable stock, and bring to a simmer. Cover and cook for 10 minutes, stirring occasionally.
- Add the vegetable puree, yogurt, and biryani masala. Mix well, cover, and cook for another 10 minutes, or until the chicken is cooked through and the sauce has thickened.
- Garnish with fresh coriander and mint leaves.
Prepare Chicken Skewers (Optional)
- If making skewers, thread the marinated chicken onto soaked wooden skewers. Heat ghee or butter in a pan or grill. Cook skewers over medium heat, rotating frequently, until cooked through and slightly charred (about 15 minutes).
Assemble the Chicken Thali
- Serve the chicken curry over cooked white rice drizzled with ghee. Arrange the chicken skewers alongside, if desired. Your Dhaba-style Chicken Thali is ready!
