Ingredients

- 7 Cloves
- 2 Cardamom Pods black
- 4 Cardamom Pods green
- 1 stick Cinnamon
- 1 tsp Fennel Seeds
- 2 Bay Leaves
- 1 tsp Cumin Seeds
- 4 Chilies finely chopped, green
- 3 Chilies dried, red
Aromatics & Paste
Potatoes & Oil
- 1 pound Baby Potatoes boiled until tender
- 4 tbsp Vegetable Oil
- 2 tbsp Mustard Oil (optional, for added flavor)
Other Ingredients
- 6 Cashews roughly chopped
- 1/3 cup Yogurt also known as curd, plain
- 0.5 tsp Turmeric Powder
- 1.5 tbsp Coriander Powder
- 1 tbsp Kashmiri Chili Powder red
- 1 tsp Ginger Powder
- 1 cup Water
- 0.5 tsp Salt to taste
- 1 tsp Cream (optional, for richness)
- 1 tbsp Fenugreek Leaves kasoori methi, crushed, dried
Instructions
Prepare the Spice Paste
- Combine ginger, garlic, green chilies, and tomatoes in a blender. Blend into a smooth paste.
Sauté the Aromatics
- Heat vegetable oil and mustard oil (optional) in a large pan or kadai. Add cloves, black cardamom, green cardamom, cinnamon, fennel seeds, bay leaves, and cumin seeds. Sauté until fragrant.
Build the Flavor Base
- Add the prepared spice paste and sauté for 5-6 minutes until the raw smell is gone.
Add Spices and Simmer
- Stir in turmeric powder, coriander powder, Kashmiri red chili powder, ginger powder, salt, and dried red chilies. Continue to sauté until oil separates from the masala.
Incorporate Yogurt
- Reduce heat to low. Add the yogurt and mix well. Cook for a minute until it starts to thicken.
Add Water and Potatoes
- Pour in the water, ensuring the gravy is the desired consistency. Gently add the boiled potatoes.
Simmer and Finish
- Cover and simmer for 20 minutes, allowing the flavors to meld and the potatoes to absorb the spices. Stir occasionally.
Garnish and Serve
- Stir in the crushed kasuri methi and cream (optional). Garnish with fresh cilantro if desired. Serve hot with rice, roti, naan, or your choice of Indian bread.
