Instructions

Prepare the Dough

  • Combine corn flour, whole wheat flour, black pepper, curry powder, and salt in a large mixing bowl.
  • Gradually add yogurt and water, mixing until a soft, pliable dough forms. Add more water if needed to achieve desired consistency.
  • Divide the dough into 4-5 equal portions.

Roll and Cook the Paratha

  • Take one portion of dough and roll it into a thin, circular shape using a rolling pin.
  • Lightly brush the rolled dough with oil.
  • Fold the circle in half, then in half again to form a quarter-circle.
  • Roll out this smaller shape into a larger circle again.
  • Repeat the folding and rolling process two more times for a layered effect.

Cook the Paratha

  • Heat a lightly oiled griddle or frying pan over medium heat.
  • Cook the paratha for 2-3 minutes per side, or until golden brown and cooked through. Apply more oil as needed to prevent sticking.

Serve

  • Serve the Makai Paratha hot with a dollop of plain yogurt and your favorite pickles.
