Ingredients
Dry Ingredients
- 2 cup All-Purpose Flour also known as maida
- 1 tsp Baking Soda
- 1 tsp Baking Powder
Wet Ingredients
- 1 1/2 cup Sugar adjust to your preferred sweetness, powdered
- 1/2 cup Milk
- 1/2 cup Ghee clarified butter; can substitute with unsalted butter
- 1 cup Sweetened Milk condensed
- 2 large Eggs for a richer flavor and texture
Instructions
Prepare the Dry Ingredients
- Sift together the all-purpose flour, baking soda, and baking powder. Repeat this process two or three times to aerate the flour.
Cream Together Wet Ingredients
- In a separate bowl, cream together the powdered sugar and ghee until light and fluffy. Beat in the eggs one at a time, then stir in the sweetened condensed milk and milk until well combined.
Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix.
Prepare the Pressure Cooker
- Remove the rubber gasket from the pressure cooker lid. Place a trivet or a heat-safe plate inside the pressure cooker. Spread a layer of salt evenly across the bottom for even heat distribution.
Bake the Cake
- Pour the batter into the prepared cake tin. Place the tin into the pressure cooker. Close the lid (without the gasket). Preheat on medium-high heat for 2-3 minutes, then reduce to medium heat and cook for 35-45 minutes. Check for doneness with a toothpick inserted into the center; if it comes out clean, the cake is ready.
Cool and Serve
- Turn off the heat and carefully allow the pressure cooker to cool completely before opening. Remove the cake tin and let the cake cool completely before frosting or serving.

Expert Tips for Perfect Pressure Cooker Cake
- Don't overmix the batter: Overmixing can lead to a tough cake. Mix until just combined.
- Use a good quality ghee: The flavor of the ghee will enhance the overall taste of the cake.
- Check for doneness carefully: A toothpick inserted into the center should come out clean. If not, cook for a few more minutes.
- Let it cool completely: This prevents the cake from crumbling when you cut it.
