Dates & Sweeteners

  • 200 gm Dates pitted medjool dates are recommended for optimal moisture and flavor.
  • 350 gm Sweetened Milk condensed

  • 100 gm Butter melted, unsalted
  • 1/4 cup Water or as needed for desired batter consistency

Instructions
 

Prepare the Dates

  • Soak 200g pitted dates in 1/4 cup of hot water for at least 20 minutes, ensuring the water level doesn't exceed the date level.

Combine Dry Ingredients

  • In a separate bowl, sift together 1 1/2 cups all-purpose flour, 1/2 teaspoon baking soda, and 1 teaspoon baking powder.

Make the Date Paste

  • Blend the soaked dates into a smooth paste using a blender or food processor. Add 100g melted unsalted butter and 350g sweetened condensed milk to the date paste and mix well.

Combine Wet and Dry Ingredients

  • Gradually add the dry ingredient mixture to the wet ingredients, mixing gently until just combined. Add more water if needed to achieve a smooth, pourable batter. Do not overmix.

Prepare the Pressure Cooker

  • Lightly grease an 8-inch round cake pan. Sprinkle 1/2 teaspoon of salt into the bottom of your pressure cooker.

Steam the Cake

  • Place a heat-resistant stand or trivet in the pressure cooker. Position the prepared cake pan on the stand. Cover the pressure cooker; remove the whistle and cook over medium heat for 25 minutes without adjusting the flame.

Cooling and Serving

  • After 25 minutes, turn off the heat and allow the pressure cooker to cool naturally for about 10-15 minutes before carefully opening. Remove the cake pan from the pressure cooker. Let the cake cool in the pan for an additional 15-20 minutes before inverting it onto a serving plate.
