Instructions

Prepare the Cauliflower Filling

  • Heat oil in a pan. Add cumin seeds and let them splutter. Add ginger paste (or green chilies) and sauté for a minute.
  • Add grated cauliflower and chopped potatoes. Sauté for a few minutes.
  • Add salt, turmeric powder, red chili powder, coriander powder, and dry mango powder. Mix well.
  • Cover and cook on low heat until the vegetables are tender and slightly roasted, stirring occasionally.
  • Remove from heat and stir in chopped cilantro.

Make the Dough

  • In a large bowl, combine whole wheat flour and salt. Add oil and mix well.
  • Gradually add water and knead into a soft, pliable dough. Cover and let it rest for at least 15-20 minutes.

Assemble and Cook the Parathas

  • Divide the dough into small, equal-sized balls.
  • Roll each ball into a thin circle. Place a spoonful of the cauliflower filling in the center.
  • Bring the edges together and seal, then gently flatten and roll again into a circle (about 6-7 inches in diameter).
  • Heat a griddle or tawa over medium heat. Cook the paratha on both sides until golden brown and slightly crispy, brushing with oil or ghee as needed.

Serve

  • Serve hot Phoolgobi Ke Parathe with yogurt, pickle, or chutney.

Recipe Notes

Expert Tips for Perfect Phoolgobi Ke Parathe

  • For extra flavor, you can add a pinch of asafoetida (hing) along with the cumin seeds.
  • Don't overcook the cauliflower filling; it should be tender but not mushy.
  • If the dough is too sticky, add a little more flour. If it's too dry, add a little more water.
  • Use a heavy-bottomed griddle or tawa for even cooking and to prevent sticking.
