Ingredients
For the Cauliflower Filling
- 1 medium Cauliflower finely grated
- 2 medium Potatoes finely chopped
- 1 tbsp Vegetable Oil
- 1 tsp Cumin Seeds
- 1 tsp Ginger Paste finely chopped, or 1-2 green chilies
- 1 1/2 tsp Salt or to taste
- 1/4 tsp Turmeric Powder (haldi)
- 1 tsp Chili Powder adjust to your spice preference, red
- 1 tsp Coriander Powder (dhania)
- 1 tsp Mango Powder (amchur), dry
- 2 tbsp Coriander finely chopped
For the Dough
- 1 cup Whole Wheat Flour atta, whole
- 1 1/2 tsp Salt or to taste
- 2 tbsp Vegetable Oil
- 1/2 - 3/4 cup Water as needed to make a soft dough
- 2 tbsp Vegetable Oil for cooking the parathas
Instructions
Prepare the Cauliflower Filling
- Heat oil in a pan. Add cumin seeds and let them splutter. Add ginger paste (or green chilies) and sauté for a minute.
- Add grated cauliflower and chopped potatoes. Sauté for a few minutes.
- Add salt, turmeric powder, red chili powder, coriander powder, and dry mango powder. Mix well.
- Cover and cook on low heat until the vegetables are tender and slightly roasted, stirring occasionally.
- Remove from heat and stir in chopped cilantro.
Make the Dough
- In a large bowl, combine whole wheat flour and salt. Add oil and mix well.
- Gradually add water and knead into a soft, pliable dough. Cover and let it rest for at least 15-20 minutes.
Assemble and Cook the Parathas
- Divide the dough into small, equal-sized balls.
- Roll each ball into a thin circle. Place a spoonful of the cauliflower filling in the center.
- Bring the edges together and seal, then gently flatten and roll again into a circle (about 6-7 inches in diameter).
- Heat a griddle or tawa over medium heat. Cook the paratha on both sides until golden brown and slightly crispy, brushing with oil or ghee as needed.

- Serve hot Phoolgobi Ke Parathe with yogurt, pickle, or chutney.
