Prepare the Cauliflower

  • Preheat oven to 425°F (220°C). Toss cauliflower florets with 2 tbsp vegetable oil and 2 tbsp cornstarch until evenly coated. Spread in a single layer on a baking sheet.
  • Bake for 30 minutes, flipping halfway through, until tender and lightly browned.

Make the Hunan Sauce

  • Heat 1 tbsp vegetable oil in a medium saucepan over medium heat. Add minced garlic, grated ginger, and dried chilies; sauté until fragrant (about 1 minute).
  • Add 1 cup water, soy sauce, sherry, rice vinegar, maple syrup, sesame oil, black pepper, and star anise. Bring to a simmer, then reduce heat and simmer uncovered for 10 minutes, or until the sauce reduces by about a third.
  • Stir in the chopped bell pepper and simmer for another 5 minutes until tender.
  • In a small bowl, whisk together 2 tsp cornstarch and 3 tbsp cold water. Add to the sauce and simmer for 1-2 minutes until thickened.

Combine and Serve

  • Remove the roasted cauliflower from the oven and pour the sauce over it. Toss gently to coat.
  • Garnish with chopped scallions, toasted sesame seeds, and red pepper flakes (optional).
  • Serve hot over rice.
