Ingredients
Dry Ingredients
- 1 cup All-Purpose Flour
- 1/2 tsp Baking Soda
- 1 tsp Baking Powder
- 1 cup Sugar powdered
- 1 cup Coconut use fresh, shredded, unsweetened coconut
Wet Ingredients
- 1/2 cup Yogurt
- 1/4 cup Vegetable Oil
- 1 tsp Vanilla Extract
Paan Mixture Ingredients
- 1 tbsp Paan Masala store-bought or homemade
- 3 Betel Leaves finely chopped
- 1 tsp Catechu katha
- 1/2 tsp Slaked Lime chuna, use sparingly
- 1/2 tsp Chutney sweet
- 1/2 tsp Fennel Seeds finely ground
- 1/2 tsp Cardamom Powder
Other Ingredients
- 1/2 cup Tutti Frutti candied fruit mix
- 2 tbsp Coconut for topping, grated
Instructions
Prepare the Dry Ingredients
- Combine all-purpose flour, baking soda, baking powder, and half of the shredded coconut in a mixing bowl. Mix well with a spoon.
Prepare the Wet Ingredients
- In a separate bowl, whisk together yogurt, powdered sugar, oil, and vanilla extract until smooth.
Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix.
Incorporate Paan and Tutti Frutti
- Fold in the prepared paan mixture (combine all paan ingredients) and tutti frutti. Mix until evenly distributed.
Prepare for Baking
- Grease and flour a small baking pan (approximately 6-inch round or square). Alternatively, use a heatproof bowl that fits inside a pressure cooker.
Bake the Cake
