Ingredients
 

Chilis

  • 3-4 ounce Jalapeños or other chili peppers. adjust amount to control spiciness., red

  • 1 tbsp Ginger but adds depth of flavor. garlic can be substituted or added., finely minced; optional, fresh
  • 1/4 tsp Salt optional; adjust to taste.

Instructions
 

Prepare the Chilis

  • Roughly chop the red jalapeños, including the seeds (remove some seeds for less heat). Using a food processor or blender, blend into a coarse paste. Do not add any water.

Combine Ingredients

  • In a medium saucepan, combine the chili paste, vinegar, sugar, ginger (if using), and salt (if using). Stir well to ensure everything is thoroughly mixed.

Cook the Chutney

  • Bring the mixture to a simmer over medium heat. Cook for 5-10 minutes, or until the chutney has thickened to your desired consistency. Stir frequently to prevent sticking or burning. The aroma of the vinegar will be quite noticeable during cooking.

Cool and Store

  • Remove from heat and allow to cool slightly. The chutney will thicken further as it cools. Transfer to a sterilized jar or container and store in the refrigerator.
