- 2 tbsp Ginger-Garlic Paste

- 5 gm Chili Powder red
- 3 gm Cumin Powder

- 1 gm Cardamom ground
- 1 gm Fennel Powder sweet
- 1 pinch Nutmeg ground
- 2 gm Garam Masala
- 3 gm Coriander Powder

- Heat ghee in a deep pan or wok. Add one cardamom pod; when it crackles, the ghee is hot.
Sautéing Aromatics
- Add ground cardamom and sauté for a few seconds. Add the chopped onion and sauté until light brown (about 2 minutes). Do not overcook.
Adding Ginger, Garlic, and Mutton
- Add the ginger-garlic paste and sauté until the raw aroma disappears. Add the lamb chops and cook slowly over low heat for 10 minutes, stirring after 5 minutes, keeping the pan covered.
