  • 1 tsp Salt to taste
  • 1/2 cup Water or as needed for desired consistency
  • 1 tbsp Coriander chopped, for garnish

  • Heat ghee in a deep pan or wok. Add one cardamom pod; when it crackles, the ghee is hot.

Sautéing Aromatics

  • Add ground cardamom and sauté for a few seconds. Add the chopped onion and sauté until light brown (about 2 minutes). Do not overcook.

Adding Ginger, Garlic, and Mutton

  • Add the ginger-garlic paste and sauté until the raw aroma disappears. Add the lamb chops and cook slowly over low heat for 10 minutes, stirring after 5 minutes, keeping the pan covered.

Incorporating Spices

  • Sprinkle salt to taste. Add red chili powder, cumin powder, dry ginger powder, and sweet fennel powder. Stir well and simmer, covered, for 5 minutes.

Simmering with Tomatoes

  • Add the crushed tomatoes, stir, and simmer until the lamb is cooked through and the tomatoes are softened (another 5-7 minutes).
